Vermicelli Kheer
Vermicelli Kheer, also known as Seviyan Kheer, is a delightful Indian dessert made with vermicelli, milk, sugar, and a blend of aromatic spices. It's a perfect treat for festive occasions and family gatherings. Ingredients: Vermicelli, Milk, Cashews, Cardamom powder, Ghee, Sugar, Almonds, Saffron

In a heavy-bottomed pan, dry roast 100 grams of vermicelli on low heat until they turn golden brown. Keep stirring to avoid burning. Once roasted, set aside.

In the same pan, heat 1 tablespoon of ghee. Add 10-12 chopped cashews and 10-12 chopped almonds. Fry them until they turn golden brown. Remove from the pan and set aside.

Pour 1 litre of full-fat milk into the pan and bring it to a boil. Once the milk starts boiling, reduce the heat and let it simmer for 5 minutes.

Add the roasted vermicelli to the milk and cook on low heat until the vermicelli becomes soft and the milk thickens slightly. This should take about 10-12 minutes.

Add 100 grams of sugar to the mixture and stir well. Cook for another 5 minutes until the sugar dissolves completely.

Add 1/4 teaspoon of cardamom powder, the fried cashews, and almonds to the kheer. Mix well.

Optionally, you can add a few strands of saffron soaked in 1 tablespoon of warm milk for added flavor and color.

Cook for another 2-3 minutes and then turn off the heat. Vermicelli Kheer is ready to be served. You can serve it hot or chilled, as per your preference.
