In a deep pan, heat 1 tablespoon of oil and sauté 1 tablespoon of finely chopped garlic and 1 tablespoon of finely chopped ginger for a minute.

Add 1/4 cup of finely chopped carrots, 1/4 cup of finely chopped cabbage, and 1/4 cup of finely chopped green beans. Sauté the vegetables for 2-3 minutes on medium heat.

Pour 4 cups of vegetable stock into the pan and bring it to a boil. Reduce the heat and let it simmer for 10-12 minutes until the vegetables are cooked.

In a small bowl, mix 2 tablespoons of cornflour with 1/4 cup of water to make a smooth paste. Add this paste to the simmering soup, stirring continuously to avoid lumps. Cook for another 2-3 minutes until the soup thickens.

Add salt and black pepper to taste, along with the juice of 1 lemon and 1/4 cup of finely chopped fresh coriander leaves. Stir well and cook for another minute.

Turn off the heat and serve the Veg Lemon Coriander Soup hot, garnished with more fresh coriander leaves.
