Veg Fried Noodles
Veg fried noodles is a delicious and flavorful Indo-Chinese dish that combines stir-fried vegetables and noodles tossed in a savory sauce. Ingredients: Hakka noodles, Garlic, Capsicum, Onion, Ginger, Carrot, Cabbage, Spring onion, Cooking oil, Vinegar, Red chilli sauce, Tomato sauce, Soy sauce

Boil 200 grams of Hakka noodles as per the instructions on the packet. Drain the water and rinse the noodles with cold water. Set aside.

In a pan, heat 2 tablespoons of oil on medium flame. Add 1 teaspoon of finely chopped garlic and 1 teaspoon of finely chopped ginger. Sauté for a minute.

Add 1/4 cup of thinly sliced onions, 1/4 cup of julienned carrots, 1/4 cup of thinly sliced bell peppers, and 1/4 cup of shredded cabbage. Stir-fry the vegetables on high flame for 2-3 minutes, ensuring they remain crunchy.

In a small bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of tomato ketchup, 1 teaspoon of red chili sauce, and 1/2 teaspoon of vinegar. Stir well to combine.

Add the cooked noodles to the pan with the vegetables. Pour the sauce mixture over the noodles and toss everything together until the noodles are well coated with the sauce.

Cook for another 2-3 minutes, stirring occasionally. Garnish with chopped spring onion greens and serve hot.
