Veg Chilli Garlic Noodles is a delicious and flavorful Indo-Chinese dish that combines spicy chilli and pungent garlic with perfectly cooked noodles and a medley of colorful vegetables. Ingredients: Garlic, Plain noodles, Soy sauce, Vinegar, Onion, Cooking oil, Green chilli, Ginger, Tomato sauce, Cabbage, Carrot, Capsicum, Spring onion, Red chilli sauce

Boil 200 grams of noodles as per the instructions on the packet. Drain the water and rinse the noodles with cold water. Set aside.

In a small bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of red chilli sauce, 1 tablespoon of tomato ketchup, and 1 teaspoon of vinegar. Set aside.

Heat 2 tablespoons of oil in a large pan or wok over medium heat. Add 1 tablespoon of finely chopped garlic and 1 tablespoon of finely chopped ginger. Sauté for a minute until fragrant.

Add 1 finely chopped onion and 2 slit green chillies. Sauté for 2-3 minutes until the onions turn translucent.

Add 1/2 cup of chopped bell peppers (red, yellow, and green), 1/2 cup of chopped carrots, and 1/2 cup of chopped cabbage. Stir-fry the vegetables for 3-4 minutes until they are slightly tender but still crunchy.

Pour the prepared sauce mixture into the pan and mix well with the vegetables.

Add the cooked noodles to the pan and toss gently to combine with the vegetables and sauce. Cook for another 2-3 minutes until the noodles are heated through and well coated with the sauce.

Garnish with 2 tablespoons of chopped spring onion greens and serve hot.
