Veg American Chop Suey
Veg American Chop Suey is a delightful Indo-Chinese fusion dish, featuring crispy noodles topped with a tangy and mildly spiced vegetable sauce. Ingredients: Hakka noodles, Corn starch, Black pepper powder, Cooking oil, Tomato sauce, Red chilli sauce, Salt, Soy sauce, Cabbage, Vinegar, Carrot, Onion, Capsicum, Spring onion

Boil 150 grams of Hakka noodles as per the instructions on the packet. Drain the water and spread the noodles on a plate to cool.

Heat oil in a deep frying pan and fry the boiled noodles in small batches until they turn golden brown and crispy. Remove from oil and place on a paper towel to remove excess oil.

In a separate pan, heat 2 tablespoons of oil and sauté 1 finely chopped onion, 1 finely chopped capsicum, 1 finely chopped carrot, and 100 grams of chopped cabbage for 2-3 minutes.

Add 2 tablespoons of tomato ketchup, 1 tablespoon of soy sauce, 1 tablespoon of red chili sauce, and 1 tablespoon of vinegar to the sautéed vegetables. Mix well and cook for another 2 minutes.

In a small bowl, mix 2 tablespoons of cornstarch with 1/4 cup of water. Add this mixture to the vegetable sauce and cook for 2-3 minutes until the sauce thickens.

Pour 2 cups of water into the pan and bring the sauce to a boil. Add salt and black pepper to taste. Simmer for 5 minutes.

To serve, place the crispy noodles on a plate and pour the hot vegetable sauce over them. Garnish with chopped spring onions.
