This hearty soup is a delicious blend of ripe tomatoes and aromatic spices, perfect for warming up on a chilly night! Ingredients: Tomato, Curry paste, Mustard seeds, Salt, Garlic, Paprika, Butter, Coriander

Place 4 large ripe tomatoes and 1/2 cup of water in a microwave-safe bowl.

Cook the tomatoes on High for 4 minutes in the microwave.

Reserve the cooking water and let the tomatoes cool slightly.

Peel and discard the skins of the tomatoes.

Process the tomatoes, reserved water, and 2 garlic cloves in a blender or food processor until smooth.

Melt 2 tablespoons of clarified ghee butter in a skillet over medium heat.

Cook 1 teaspoon of mustard seeds in the skillet for 1 minute.

Stir in 6 curry leaves into the skillet.

Pour the processed tomato and garlic mixture into the skillet.

Stir in 1 cup of water into the skillet.

Mix in 2 teaspoons of white sugar, 1 teaspoon of paprika, and salt to taste.

Bring the mixture to a boil, then reduce heat to low.

Mix in 2 tablespoons of chopped cilantro.

Continue cooking for 5 minutes and serve warm.
