Preheat the oven to 200°C (400°F).
Prepare the pizza dough by mixing 500 grams of all-purpose flour, 1 teaspoon of salt, 1 teaspoon of sugar, and 1 packet (7 grams) of instant yeast in a large bowl. Gradually add 300 ml of warm water and 2 tablespoons of olive oil, mixing until a soft dough forms. Knead the dough for 5-7 minutes until smooth and elastic.
Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1 hour or until doubled in size.
Meanwhile, prepare the tomato sauce by heating 2 tablespoons of olive oil in a pan. Add 1 finely chopped onion and 2 minced garlic cloves, and sauté until translucent. Add 500 grams of chopped tomatoes, 1 teaspoon of sugar, salt, and pepper to taste. Cook for 15-20 minutes until the sauce thickens. Set aside to cool.
Once the dough has risen, punch it down and roll it out on a floured surface to form a pizza base. Transfer the base to a greased pizza tray or baking sheet.
Spread the tomato sauce evenly over the pizza base, leaving a small border around the edges. Top with 200 grams of grated mozzarella cheese and 100 grams of sliced tomatoes.
Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Remove the pizza from the oven and garnish with fresh basil leaves. Slice and serve hot.
