Tofu And Mushroom Stroganoff
Tofu and Mushroom Stroganoff is a delicious and creamy Indian fusion dish that combines the goodness of tofu and mushrooms in a rich, flavorful sauce. Ingredients: Mushroom, Tofu, Garlic, Vegetable, Dairy cream, Salt, Black pepper powder, Corn starch, Thyme, Onion, Cooking oil

Cut 200 grams of firm tofu into small cubes and set aside. Clean and slice 200 grams of mushrooms.

In a pan, heat 2 tablespoons of oil over medium heat. Add 1 finely chopped onion and 2 cloves of minced garlic, and sauté until the onion turns translucent.

Add the sliced mushrooms to the pan and cook for 5-7 minutes until they release their moisture and become tender.

Add the cubed tofu to the pan and cook for another 3-4 minutes, stirring gently to avoid breaking the tofu.

In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to form a slurry. Set aside.

Pour 200 ml of vegetable stock and 200 ml of fresh cream into the pan. Stir well to combine.

Add the cornstarch slurry to the pan and mix well. Cook for 2-3 minutes until the sauce thickens.

Season the stroganoff with salt, black pepper, and 1 teaspoon of dried thyme. Cook for another 2 minutes, allowing the flavors to meld.

Serve the tofu and mushroom stroganoff over cooked rice or noodles, garnished with chopped fresh parsley.
