Thukpa
Thukpa is a delicious and comforting noodle soup originating from the Himalayan region of India. It is a perfect blend of spicy, tangy, and savory flavors that will warm your soul on a chilly day.
Ingredients: Plain noodles, Garlic, Beans, Ginger, Onion, Garam masala, Carrot, Turmeric powder, Salt, Coriander, Vegetable, Cabbage, Red chilli powder, Cooking oil

Boil 200 grams of noodles in a large pot of water until they are cooked al dente. Drain the noodles and set them aside.

In a large pan, heat 2 tablespoons of oil. Add 1 teaspoon of finely chopped ginger and 2 cloves of minced garlic. Sauté for a minute until fragrant.

Add 1 finely chopped onion and cook until it turns translucent.

Add 1 chopped carrot, 1/2 cup of chopped cabbage, and 1/2 cup of chopped beans to the pan. Cook the vegetables for 5-7 minutes until they are tender.

Add 1/2 teaspoon of turmeric powder, 1/2 teaspoon of red chili powder, 1/2 teaspoon of garam masala, and salt to taste. Mix well and cook for another 2 minutes.

Pour 1 liter of vegetable stock or water into the pan and bring it to a boil.

Add the cooked noodles to the boiling soup and let it simmer for 5 minutes.

Finally, add 1 tablespoon of chopped coriander leaves and 1 tablespoon of lemon juice. Stir well and turn off the heat.
