Thai Green Curry Chicken

Toss 450 grams of skinless, boneless chicken breast half in 1 tablespoon of dark soy sauce.

Coat the chicken evenly with 1 tablespoon of all-purpose flour.

Heat 2 tablespoons of cooking oil in a large skillet over medium-high heat.

Place the chicken in the skillet and cook, stirring until browned, about 5 minutes. Remove the chicken.

Reduce heat to medium and add 2 tablespoons of green curry paste. Cook for 1 minute until fragrant.

Stir in 2 chopped green onions, 3 peeled and chopped garlic cloves, and 1 teaspoon of peeled and chopped ginger. Cook for an additional 2 minutes.

Return the chicken to the skillet, stirring to coat with the curry mixture.

Stir in 2 cups of coconut milk, 1 tablespoon of fish sauce, 1 tablespoon of dark soy sauce, and 2 tablespoons of white sugar into the chicken-curry mixture.

Allow to simmer over medium heat for 20 minutes until the chicken is tender.

Serve garnished with 1/2 cup of cilantro leaves.
