Choose your main ingredient (vegetables like potato, cauliflower, or paneer, or protein like fish or chicken) and cut it into bite-sized pieces.
In a bowl, mix 100 grams of gram flour (besan), 1 teaspoon red chili powder, 1 teaspoon turmeric powder, 1 teaspoon garam masala, 1 teaspoon amchur powder, 1 teaspoon ginger-garlic paste, salt to taste, and a little water to make a thick batter.
Coat the main ingredient pieces with the batter and let them marinate for 15-20 minutes.
Heat 4 tablespoons of oil on a tawa or flat griddle over medium heat.
Place the marinated pieces on the tawa and cook for 3-4 minutes on each side until they turn golden brown and crispy.
Remove the cooked pieces from the tawa and place them on a plate lined with paper towels to absorb excess oil.
Garnish with chopped coriander leaves and serve hot with mint chutney or tomato ketchup.
