In a mixing bowl, combine 500 grams of minced chicken or paneer, 1/4 cup of finely chopped onions, 1/4 cup of chopped coriander leaves, 1 teaspoon of ginger-garlic paste, 1 teaspoon of red chili powder, 1/2 teaspoon of garam masala, 1/2 teaspoon of chaat masala, 1/4 teaspoon of turmeric powder, salt to taste, and 1 tablespoon of oil. Mix well and let it marinate for 30 minutes.
Divide the marinated mixture into equal portions and shape them into burger patties.
Preheat a grill pan or tawa on medium heat. Brush the patties with oil and cook them for 4-5 minutes on each side until they are cooked through and have a nice char on the outside.
In the meantime, slice burger buns in half and toast them on the same grill pan or tawa for a minute or until they are slightly crispy.
Assemble the burger by spreading green chutney on the bottom half of the bun, placing a lettuce leaf, followed by the cooked tandoori patty, a slice of tomato, a slice of onion, and a dollop of tamarind chutney. Cover with the top half of the bun.
