Heat 2 tablespoons of vegetable oil in a skillet over medium heat.

Add 1/2 teaspoon of cumin seeds, 2 bay leaves, and 1 halved red chile pepper.

Cook until cumin seeds begin to sputter, stirring constantly for 1 to 2 minutes.

Add 4 cut tomatoes and 1 peeled piece of ginger root into the cumin mixture.

Cook and stir until all the water cooks out of the tomatoes, about 5 minutes.

Stir in 1/2 cup of grated jaggery and 4 pitted chopped dates into the tomato mixture.

Cook until jaggery dissolves and the mixture thickens, about 5 more minutes.

Add 1/2 teaspoon of Indian black salt.

Remove the ginger piece and bay leaves from the chutney before serving.
