Spinach And Sun-dried Tomato Pasta

In a small saucepan, bring 1 cup of vegetable broth to a boil.

Remove from heat and add 12 dehydrated sun-dried tomatoes to the broth.

Let the tomatoes soak for 15 minutes or until softened, then drain and reserve the broth.

Coarsely chop the softened sun-dried tomatoes and set aside.

Bring a large pot of lightly salted water to a boil.

Add 1 package of uncooked penne pasta to the pot.

Cook the pasta for 9 to 12 minutes until al dente, then drain.

In a skillet over medium heat, toast 2 tablespoons of pine nuts, stirring occasionally.

Remove the pine nuts from the skillet once they are lightly toasted.

In the same skillet, heat 1 tablespoon of olive oil and 1/4 teaspoon of crushed red pepper flakes over medium heat.

Add 1 minced garlic clove and sauté for 1 minute until tender.

Mix in 1 rinsed bunch of spinach and cook until almost wilted.

Pour the reserved vegetable broth into the skillet.

Stir in the chopped sun-dried tomatoes and continue cooking for 2 minutes or until heated through.

In a large bowl, toss the cooked pasta with the spinach and tomato mixture.

Add the toasted pine nuts and mix well.

Serve the pasta with 1/4 cup of grated Parmesan cheese on top.
