Prepare 1 package of chopped spinach according to package directions. Drain and pat dry.

Preheat oven to 350 degrees F (175 degrees C).

Sprinkle 1/2 cup of shredded cheddar cheese on one side of each of the 4 flour tortillas.

Place tortillas cheese side up on baking sheets and bake for 5 minutes or until cheese is melted.

In a skillet, melt 2 tablespoons of butter over medium heat.

Stir in 2 cloves of sliced garlic and 2 sliced portobello mushroom caps, and cook for about 5 minutes.

Mix in the cooked spinach and continue cooking for 5 minutes.

Place an equal amount of the spinach and mushroom mixture on the cheese side of each tortilla.

Fold tortillas in half over the filling.

Heat 1 tablespoon of vegetable oil in a separate skillet over medium heat.

Place quesadillas in the skillet one at a time and cook for 3 minutes on each side until golden brown.

Cut each quesadilla into 4 wedges to serve.
