Heat 2 teaspoons of olive oil in a large saucepan or soup pot over medium heat.

Add 4 chopped leeks and 2 chopped garlic cloves, sauté until tender, about 5 minutes.

Stir in 2 cans of fat-free chicken broth, 2 cans of rinsed and drained cannellini beans, 2 bay leaves, and 2 teaspoons of ground cumin.

Bring the mixture to a boil, then reduce the heat to low.

Stir in 1/2 cup of wheat couscous, cover, and simmer for 5 minutes.
