Heat 1 tablespoon of peanut oil in a wok over medium heat.

Sauté the boneless chopped chicken breasts in batches until tender.

Remove the chicken from the wok and set aside.

Heat the remaining 2 tablespoons of peanut oil in the wok.

Add the large sliced onion and sliced red bell pepper.

Stir-fry until the onions become soft.

Add 1 tablespoon of garlic red chile paste, 1 cup of coconut milk, 1 chicken stock cube, and 1/4 cup of water.

Stir and cook until the mixture starts boiling.

Taste and add an additional chicken stock cube if desired for seasoning.

Add 1/2 cup of unsalted cashews and 2 tablespoons of chopped basil leaves.

Remove from heat and serve hot.
