Sol Kadhi is a refreshing and tangy Konkani drink made from coconut milk and kokum, perfect for beating the summer heat and aiding digestion.
Ingredients: Kokum, Coconut, Salt, Coriander, Cumin powder, Green chilli
Soak 8-10 kokum pieces in 1/2 cup of warm water for 20-30 minutes. Squeeze the kokum to extract the juice and strain the liquid. Keep the kokum extract aside.
Grate 1 medium-sized coconut and add it to a blender along with 1 cup of warm water. Blend until smooth.
Strain the blended coconut mixture through a muslin cloth or fine sieve to extract the coconut milk. Squeeze the grated coconut to get as much milk as possible.
In a mixing bowl, combine the extracted coconut milk and kokum extract. Mix well.
Add 1-2 finely chopped green chillies, 1/2 teaspoon of cumin powder, and salt to taste. Mix well.
Refrigerate the Sol Kadhi for 30 minutes to an hour before serving.
Garnish with finely chopped coriander leaves and serve chilled.
