Shahi Kaju Aloo
Shahi Kaju Aloo is a rich and creamy Indian dish made with potatoes and cashews, cooked in a deliciously spiced tomato-based gravy. It's perfect for special occasions and festive gatherings.

Soak 100 grams of cashews in warm water for 30 minutes, then drain and set aside.

Boil 500 grams of potatoes, peel and cut them into medium-sized cubes.

Heat 2 tablespoons of ghee in a pan, add 1 teaspoon of cumin seeds and let them splutter.

Add 1 finely chopped onion and sauté until golden brown.

Add 1 teaspoon of ginger-garlic paste and sauté for another minute.

Add 2 finely chopped tomatoes and cook until they turn soft and mushy.

Add 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, 1 teaspoon of coriander powder, and 1/2 teaspoon of garam masala. Cook for 2-3 minutes.

Add the soaked cashews and cook for another 2 minutes.

Add the boiled and cubed potatoes to the pan and mix well.

Pour 1 cup of water and salt to taste, then bring the mixture to a boil.

Lower the heat and let it simmer for 10-12 minutes, or until the gravy thickens.

Add 1/4 cup of fresh cream and mix well. Cook for another 2 minutes.

Garnish with chopped coriander leaves and serve hot with roti, naan, or rice.
