Schezwan Chicken
Schezwan Chicken is a spicy and flavorful Indo-Chinese dish that combines tender chicken pieces with a tangy and fiery Schezwan sauce. In a bowl, mix 250 grams of boneless chicken pieces with 2 tablespoons of cornflour, 1 teaspoon of ginger-garlic paste, 1/2 teaspoon of black pepper powder, and salt to taste. Marinate for 20 minutes.

Heat oil in a kadai or deep frying pan and fry the marinated chicken pieces until golden brown. Remove and set aside.

In another pan, heat 2 tablespoons of oil and sauté 1 tablespoon of finely chopped garlic, 1 tablespoon of finely chopped ginger, and 2-3 chopped green chilies for a minute.

Add 1/2 cup of chopped onions and 1/2 cup of chopped capsicum. Cook for 2-3 minutes until they are slightly softened.

Add 3 tablespoons of Schezwan sauce, 1 tablespoon of soy sauce, 1 tablespoon of tomato ketchup, and salt to taste. Mix well and cook for a minute.

Add the fried chicken pieces to the pan and toss well to coat them with the sauce.

In a small bowl, mix 1 tablespoon of cornflour with 1/4 cup of water. Add this mixture to the pan and cook for 2-3 minutes until the sauce thickens.

Garnish with chopped spring onion greens and serve hot with fried rice or noodles.
