Spray a pan with cooking spray and heat over medium-high heat.
Add 2 minced garlic cloves and 1 tablespoon of minced ginger, cook until golden brown.
Stir in 1/2 cup of tomato sauce, 1 teaspoon of coriander, 1 teaspoon of cumin, 1 teaspoon of red cayenne pepper, 1 teaspoon of garam masala, and 1/2 teaspoon of salt.
Reduce heat to low, partially cover, and simmer for 8-9 minutes, stirring frequently.
Stir in 1 package of chopped thawed frozen spinach.
Simmer for 8-10 minutes until spinach turns olive green.
Stir in 1 cup of low-fat whipping cream.
Stir in 1 cup of cubed panir (cheese).
Simmer for 3-4 minutes or until cheese is hot, then remove from stove.
