Take 500 grams of fresh curd and place it in a muslin cloth. Tie the cloth and hang it over a bowl for 4-5 hours to drain the whey and get thick hung curd.

In a blender, add 200 grams of fresh raspberries and blend them into a smooth puree. Strain the puree to remove any seeds.

In a mixing bowl, combine the hung curd and raspberry puree. Add 100 grams of powdered sugar and 1/2 teaspoon of cardamom powder. Mix well until smooth and creamy.

Refrigerate the raspberry shrikhand for at least 2 hours to allow the flavors to blend and the dessert to chill.

Before serving, garnish the raspberry shrikhand with a few fresh raspberries and chopped pistachios.
