Raspberry Jalebi
Raspberry Jalebi is a delightful twist on the traditional Indian sweet, Jalebi. This crispy, juicy, and fruity dessert is perfect for those who love the tangy taste of raspberries combined with the sweetness of Jalebi. In a bowl, mix 200 grams of all-purpose flour (maida) and 50 grams of cornflour. Gradually add 250 ml of water, whisking continuously to form a smooth, lump-free batter. Cover and let it ferment for 8-10 hours.

In a separate pan, prepare the sugar syrup by boiling 500 grams of sugar with 250 ml of water. Add a pinch of saffron strands and 1/2 teaspoon of cardamom powder. Cook until the syrup reaches a one-string consistency. Keep it warm.

In another pan, heat 500 ml of ghee or oil for deep frying. Pour the fermented batter into a piping bag or a squeeze bottle with a small nozzle.

Once the oil is hot, carefully pipe the batter into the oil in a spiral shape to form Jalebis. Fry them on medium heat until they turn golden brown.

Remove the fried Jalebis from the oil and immediately dip them into the warm sugar syrup. Let them soak for 2-3 minutes, then remove and place them on a plate.

In a separate pan, cook 200 grams of raspberries with 50 grams of sugar until they form a thick, jam-like consistency. Allow it to cool.

Fill a piping bag with the raspberry mixture and carefully pipe it onto the Jalebis, filling the gaps between the spirals.

Garnish the Raspberry Jalebis with chopped pistachios and serve warm or at room temperature.
