In a blender, blend 200 grams of fresh raspberries to make a smooth puree. Keep it aside.

In a non-stick pan, heat 1 tablespoon of ghee on low flame. Add 200 grams of grated coconut and roast it for 2-3 minutes until it becomes slightly golden.

Add the raspberry puree to the roasted coconut and mix well. Cook for another 2-3 minutes.

Add 200 grams of sugar and 1/4 teaspoon of cardamom powder to the mixture. Stir continuously until the sugar dissolves and the mixture thickens.

Grease a square or rectangular tray with a little ghee. Pour the raspberry coconut mixture into the tray and spread it evenly.

Allow the mixture to cool for 10-15 minutes. Once it is slightly set, cut it into square or diamond-shaped pieces.

Refrigerate the raspberry coconut barfi for 1-2 hours until it is completely set and firm.

Gently remove the barfi pieces from the tray and serve chilled.
