Rasmalai Cake
Rasmalai Cake is a delightful fusion dessert that combines the flavors of traditional Bengali rasmalai with a soft and spongy cake, perfect for special occasions and celebrations. Preheat the oven to 180°C. Grease and line a 9-inch round cake tin with parchment paper.

In a large mixing bowl, combine 200 grams of all-purpose flour (maida), 200 grams of powdered sugar, 1 teaspoon of baking powder, and 1/2 teaspoon of baking soda. Mix well.

In another bowl, mix 200 grams of softened unsalted butter, 200 grams of condensed milk, 1 teaspoon of cardamom powder, and 1 teaspoon of vanilla essence. Whisk until smooth.

Gradually add the dry ingredients to the wet ingredients, mixing until a smooth batter is formed. If the batter is too thick, add a little milk to adjust the consistency.

Pour the batter into the prepared cake tin and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely.

While the cake is cooling, prepare the rasmalai milk by boiling 1 liter of full-fat milk with 200 grams of sugar, 1/2 teaspoon of saffron strands, and 1 teaspoon of cardamom powder. Simmer until the milk reduces to half its original volume. Allow it to cool.

Once the cake has cooled, poke holes all over the surface using a fork. Pour the prepared rasmalai milk over the cake, allowing it to soak in.

Decorate the cake with whipped cream, chopped nuts (pistachios and almonds), and prepared rasmalai pieces. Refrigerate for at least 2 hours before serving.
