Rinse 200 grams of quinoa thoroughly under running water and soak it for 15-20 minutes. Drain the water and set aside.
In a pressure cooker or deep pan, heat 2 tablespoons of oil or ghee. Add 1 teaspoon of cumin seeds and let them crackle.
Add 1 finely chopped onion and sauté until it turns golden brown.
Add 1 teaspoon of ginger-garlic paste and sauté for another minute.
Add 1 chopped tomato, 1/4 teaspoon of turmeric powder, 1/2 teaspoon of red chili powder, 1/2 teaspoon of garam masala, and salt to taste. Cook until the tomatoes turn soft and the spices are well-blended.
Add 1/2 cup of chopped mixed vegetables (carrots, beans, peas, and bell peppers) and sauté for 2-3 minutes.
Add the soaked quinoa to the pan and mix well with the vegetables and spices.
Pour 400 ml of water into the pan, stir well, and bring it to a boil.
Cover the pan or pressure cooker and cook the quinoa pulao for 15-20 minutes on low heat, or until the quinoa is cooked and the water is absorbed.
Garnish with chopped coriander leaves and serve hot with raita or yogurt.
