Prawns Schezwan Fried Rice
Prawns Schezwan Fried Rice is a delicious Indo-Chinese dish that combines succulent prawns with spicy Schezwan sauce and perfectly cooked rice, making it a delightful treat for your taste buds. Ingredients: Prawns, Schezwan sauce, Basmati rice, Salt, Cooking oil, Onion, Soy sauce, Vinegar, Spring onion, Capsicum, Ginger garlic paste

Wash and devein 250 grams of prawns, then marinate them with 1 teaspoon of ginger-garlic paste, 1 teaspoon of soy sauce, and a pinch of salt for 15 minutes.

Cook 1 cup of basmati rice in 2 cups of water until it's 90% cooked. Drain the water and spread the rice on a plate to cool.

In a pan, heat 2 tablespoons of oil and stir-fry the marinated prawns for 3-4 minutes until they turn pink and are cooked through. Remove the prawns from the pan and set aside.

In the same pan, add 1 tablespoon of oil and sauté 1 finely chopped onion, 1/2 cup of chopped bell peppers, and 1/4 cup of chopped spring onions for 2-3 minutes.

Add 2 tablespoons of Schezwan sauce, 1 teaspoon of soy sauce, 1 teaspoon of vinegar, and salt to taste. Mix well and cook for 1-2 minutes.

Add the cooked prawns and rice to the pan, and gently mix everything together. Cook for another 2-3 minutes, ensuring the rice and prawns are well coated with the sauce.

Garnish with chopped spring onion greens and serve hot.
