Prawns Manchurian
Prawns Manchurian is a delicious Indo-Chinese fusion dish that combines succulent prawns with a tangy, spicy sauce, perfect for a delightful appetizer or main course. Clean and devein 500 grams of prawns, then marinate them with 1 teaspoon of ginger-garlic paste, 1 teaspoon of red chili powder, 1/2 teaspoon of black pepper powder, and salt for 20 minutes.

In a bowl, mix 3 tablespoons of cornflour, 3 tablespoons of all-purpose flour (maida), and water to make a thick batter. Dip the marinated prawns in the batter.

Heat oil in a kadai or deep frying pan and deep-fry the prawns until they turn golden brown. Remove and set aside on a paper towel to drain excess oil.

In another pan, heat 2 tablespoons of oil and sauté 1 tablespoon of finely chopped garlic, 1 tablespoon of finely chopped ginger, and 2-3 chopped green chilies for a minute.

Add 1/4 cup of finely chopped onions and 1/4 cup of finely chopped capsicum, and sauté for 2-3 minutes until they turn slightly soft.

Mix 2 tablespoons of tomato ketchup, 2 tablespoons of red chili sauce, 1 tablespoon of soy sauce, and 1/2 teaspoon of black pepper powder in a bowl. Add this sauce mixture to the pan and cook for a minute.

Dissolve 1 tablespoon of cornflour in 1/4 cup of water and add it to the pan. Cook until the sauce thickens.

Add the fried prawns to the sauce and mix well, ensuring the prawns are well coated with the sauce. Cook for 2-3 minutes.

Garnish with chopped spring onion greens and serve hot.
