Potatoes In Spicy Peanut And Sesame Paste
Savory and spicy potatoes with a delicious peanut and sesame paste coating, a flavor-packed dish that's sure to tantalize your taste buds! In a blender, add 1/4 cup of roasted peanuts and 1 1/2 teaspoons of toasted sesame seeds.

Pour in enough water to not quite cover the seeds and blend until a smooth, creamy paste is formed. Set aside.

Heat 4 tablespoons of olive oil in a medium saucepan over medium-low heat.

Add 5 cloves, 3 cardamom pods, 1-inch cinnamon, 1/2 teaspoon cumin seeds, 1/2 teaspoon mustard seeds, and 1 curry leaf.

Stir in 2 medium chopped onions and cook until soft and translucent.

Mix in 2 teaspoons of ginger-garlic paste and cook, stirring constantly for 1 minute.

Stir in 1 large chopped tomato and cook for about 5 minutes.

Add 1 teaspoon chili powder, 2 sliced green chilies lengthwise, 1/2 teaspoon turmeric powder, and 1 1/4 teaspoons salt.

Stir in half of the 1/2 chopped cilantro bunch and half of the 1/2 chopped mint bunch.

Add the peanut and sesame paste, stirring vigorously to prevent sticking.

Stir in 4 medium peeled and diced potatoes, mixing well to coat.

Pour in enough water to not quite cover potatoes and mix thoroughly.

Stir in the remaining mint and cilantro.

Cover and cook on low heat, stirring occasionally, until the potatoes are soft and the sauce is reduced to a creamy paste, about 30 minutes.
