Peel and grate 500 grams of potatoes and 1 medium-sized onion. Squeeze out the excess liquid using a clean kitchen towel or cheesecloth.
In a large mixing bowl, combine the grated potatoes and onions with 2 beaten eggs, 60 grams of all-purpose flour, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix well to form a thick batter.
Heat 2-3 tablespoons of oil in a non-stick frying pan over medium heat. Drop spoonfuls of the potato mixture into the pan, flattening them slightly with the back of the spoon.
Fry the latkes for 3-4 minutes on each side, or until they are golden brown and crispy. Adjust the heat as needed to prevent burning.
Transfer the cooked latkes to a plate lined with paper towels to absorb excess oil. Serve hot with sour cream or applesauce.
