In a large bowl, combine 1/4 cup of cut pineapple, 2 cups of boiled, peeled, and diced potatoes, 1/2 cup of chopped red bell pepper, and 1 chopped spring onion.
Add 1/2 cup of boiled, salted, drained, and frozen corn to the mixture.
Season the salad with salt to taste.
Gently mix in 1 1/2 cups of mayonnaise until all ingredients are well-coated.
Garnish the salad with 1 tablespoon of chopped chives and 2 tablespoons of chopped walnuts.
Serve the potato and pineapple salad immediately or refrigerate until ready to serve.
