Bring a pot of water to a boil.

Add 600 grams of skinless, boneless chicken breast and cook for 20-25 minutes until no longer pink in the center.

Transfer chicken to a work surface and let it cool until easily handled.

Heat 1 tablespoon of olive oil in a skillet over medium heat.

Cook and stir 1/2 chopped onion for about 3 minutes.

Add 1 chopped red bell pepper and cook for another 10 minutes until onion and pepper are softened.

Add 4 chopped garlic cloves and cook for 1 minute until fragrant.

Cover the skillet and cook the onion mixture for 5-10 minutes until slightly browned.

Shred the cooled chicken using your hands and sprinkle it into the onion mixture.

Add 1/4 cup of cooking sherry and 1 tablespoon of capers, then season with salt to taste.

Cook and stir the chicken mixture for 10-15 minutes until heated through and flavors have blended.

Mix 1/4 cup of chopped cilantro and 1 chopped roma tomato into the chicken mixture.
