In a large mixing bowl, combine 500 grams of all-purpose flour (maida), 1 teaspoon of sugar, 1/2 teaspoon of salt, and 1/2 teaspoon of baking soda.
Add 2 tablespoons of oil and mix well until the flour mixture becomes crumbly.
In a separate bowl, mix 1/2 cup of yogurt and 1/2 cup of water. Gradually add this mixture to the flour mixture and knead until a soft dough is formed. Cover the dough with a damp cloth and let it rest for 2 hours.
After the resting period, divide the dough into 8 equal portions and roll each portion into a smooth ball.
Preheat a tawa or griddle over medium heat. Roll out each dough ball into a circular shape with a thickness of about 3-4 mm.
Place the rolled kulcha on the hot tawa and cook for 1-2 minutes on each side or until golden brown spots appear. Apply some ghee or butter on both sides while cooking.
Serve the plain kulche hot with your choice of curry or dal.
