Preheat the oven to 180°C (350°F).
Cut 4 pita breads into quarters and arrange them on a baking sheet.
Drizzle 2 tablespoons of olive oil over the pita bread quarters and sprinkle with a pinch of salt and pepper. Bake for 10-12 minutes, or until the pita bread is crisp and golden brown.
In a mixing bowl, combine 250 grams of finely chopped tomatoes, 1 finely chopped onion, 2 cloves of minced garlic, 15 grams of chopped fresh basil, 1 tablespoon of balsamic vinegar, and 1 tablespoon of olive oil. Mix well and season with salt and pepper to taste.
Remove the pita bread from the oven and let it cool for a few minutes.
Spoon the tomato mixture evenly over the pita bread quarters and garnish with additional chopped basil, if desired. Serve immediately.
