Pistachio And Orange Biscotti

Preheat the oven to 180°C. Line a baking tray with parchment paper.

In a large bowl, combine 250 grams of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. Mix well.

In another bowl, whisk together 150 grams of granulated sugar, 2 large eggs, and 1 teaspoon of vanilla extract until smooth.

Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.

Fold in 100 grams of roughly chopped pistachios (pista) and 2 tablespoons of grated orange zest.

Divide the dough into two equal parts and shape each into a log, approximately 30 cm long and 5 cm wide.

Place the logs on the prepared baking tray, leaving enough space between them for expansion.

Bake for 25-30 minutes, or until the logs are golden brown and firm to the touch.

Remove from the oven and let the logs cool for 10 minutes. Reduce the oven temperature to 150°C.

Using a sharp knife, cut the logs into 1.5 cm thick slices.

Arrange the slices on the baking tray and bake for an additional 15-20 minutes, or until the biscotti are crisp and golden.

Remove from the oven and let the biscotti cool completely on a wire rack before serving.
