Pineapple Kesari
Pineapple Kesari is a delightful Indian dessert made with semolina, pineapple, and aromatic spices. This sweet treat is perfect for special occasions or to satisfy your sweet cravings. Ingredients: Sooji, Pineapple, Ghee, Cardamom powder, Milk, Sugar, Kishmish, Saffron, Cashews

Chop 250 grams of fresh pineapple into small pieces and set aside.

In a pan, heat 2 tablespoons of ghee and roast 1 cup (200 grams) of semolina (rava) on low flame until it turns golden brown. Keep stirring to avoid burning. Once roasted, transfer it to a plate and set aside.

In the same pan, add 1.5 cups (375 ml) of water and 1 cup (250 ml) of sugar. Stir well until the sugar dissolves completely.

Add the chopped pineapple pieces to the sugar syrup and cook for 5-7 minutes on medium flame until the pineapple becomes soft.

Slowly add the roasted semolina to the pineapple-sugar syrup mixture, stirring continuously to avoid lumps.

Cook the mixture on low flame until the semolina absorbs the liquid and becomes thick.

Add 1/4 teaspoon of cardamom powder and a pinch of saffron strands soaked in 1 tablespoon of warm milk. Mix well.

Cook for another 2-3 minutes, then turn off the flame. Garnish with 2 tablespoons of chopped cashews and raisins fried in ghee.
