Pineapple And Cheese Quesadillas

Chop 200 grams of fresh pineapple into small cubes and grate 200 grams of cheese (preferably mozzarella or cheddar).

Heat a non-stick tawa or pan over medium heat. Place a 10-inch whole wheat tortilla on the tawa and cook for 30 seconds.

Spread half of the grated cheese evenly on one half of the tortilla. Then, evenly distribute half of the pineapple cubes over the cheese.

Fold the tortilla in half, covering the pineapple and cheese. Press gently with a spatula to seal the edges.

Cook for 1-2 minutes on each side, or until the tortilla is golden brown and the cheese has melted. Make sure to flip the quesadilla carefully to avoid spilling the filling.

Remove the quesadilla from the tawa and let it cool for a minute. Cut it into 3-4 wedges using a sharp knife or pizza cutter.

Repeat steps 2-6 for the second quesadilla.

Serve the pineapple and cheese quesadillas with sour cream or salsa on the side.
