Wash and peel 4 medium-sized potatoes. Cut them into thin, long strips (like French fries) and soak them in cold water for 15-20 minutes to remove excess starch.
In a small bowl, mix 2 tablespoons of peri peri spice mix, 1 teaspoon of red chili powder, 1 teaspoon of garlic powder, and 1 teaspoon of salt.
Drain the potatoes and pat them dry with a clean kitchen towel or paper towel.
Heat oil in a deep frying pan or kadai over medium heat. Once the oil is hot, deep fry the potato strips in batches until they are golden brown and crispy. Remove the fries from the oil and place them on a paper towel to absorb excess oil.
While the fries are still hot, toss them with the prepared peri peri spice mixture until they are evenly coated.
Serve the peri peri French fries hot with ketchup or mayonnaise for dipping.
