In a bowl, mix 500 grams of minced chicken or paneer with 1 finely chopped onion, 2 minced garlic cloves, 1 teaspoon ginger paste, 1 teaspoon red chili powder, 1 teaspoon garam masala, salt to taste, and 2 tablespoons of breadcrumbs. Mix well and form into 4 equal-sized patties.
Heat 2 tablespoons of oil in a non-stick pan over medium heat. Cook the patties for 4-5 minutes on each side until they are golden brown and cooked through.
In a separate bowl, prepare the peri peri sauce by mixing 4 tablespoons of mayonnaise, 2 tablespoons of peri peri sauce, and 1 tablespoon of tomato ketchup.
Slice 4 burger buns in half and lightly toast them on the pan.
Assemble the burgers by spreading the peri peri sauce on the bottom half of each bun, placing a cooked patty on top, followed by sliced tomatoes, onions, and lettuce. Cover with the top half of the bun.
