Wash and peel 2 ripe pears, then cut them into thin slices.
Cut 200 grams of paneer into small cubes.
In a large mixing bowl, combine the pear slices and paneer cubes.
Finely chop a handful of fresh mint leaves and add them to the bowl.
In a separate small bowl, prepare the dressing by whisking together 2 tablespoons of lemon juice, 1 tablespoon of honey, 1 tablespoon of olive oil, salt, and black pepper to taste.
Pour the dressing over the pear and paneer mixture, and gently toss to coat evenly.
Refrigerate the salad for 15-20 minutes to allow the flavors to meld.
Before serving, garnish with a few more chopped mint leaves and some crushed roasted peanuts for added crunch.
