Peel, pit, and chop 1.5 kg of peaches.
In a food processor or blender, combine the chopped peaches and 1 teaspoon of ground ginger.
Puree the peach and ginger mixture until smooth.
Stir in 1 1/3 cups of heavy cream and 2 tablespoons of rum.
Chill the soup in the refrigerator.
Serve the Peachy Ginger Soup cold.
