Pea And Carrot Pot Pie
Pea and carrot pot pie is a delicious and comforting dish, packed with the goodness of peas, carrots, and a flaky crust that will leave you craving for more. Ingredients: Carrot, Puff pastry, Peas, Thyme, Chicken broth, Vegetable oil, Maida, Salt, Onion, Black pepper powder

Preheat the oven to 200°C. In a large pan, heat 2 tablespoons of oil and sauté 1 finely chopped onion until translucent.

Add 200 grams of diced carrots and cook for 5 minutes. Then, add 200 grams of fresh or frozen peas and cook for another 5 minutes.

Stir in 2 tablespoons of all-purpose flour and cook for 2 minutes. Gradually add 500 ml of vegetable broth, stirring continuously to avoid lumps. Bring the mixture to a boil and let it simmer for 10 minutes until it thickens.

Add salt and pepper to taste, along with 1 teaspoon of dried thyme and 1 tablespoon of chopped fresh coriander. Mix well and remove from heat.

Roll out 300 grams of puff pastry on a lightly floured surface. Cut out a circle slightly larger than the diameter of your pie dish.

Pour the pea and carrot mixture into a greased pie dish. Place the puff pastry circle on top, pressing the edges to seal. Make a small slit in the center to allow steam to escape.

Bake the pie in the preheated oven for 25-30 minutes, or until the crust is golden brown and puffed up. Let it cool for a few minutes before serving.
