Pasta Puttanesca

Boil 500 grams of pasta (preferably spaghetti or linguine) in a large pot of salted water until al dente. Drain and set aside.

In a large pan, heat 2 tablespoons of olive oil over medium heat. Add 1 finely chopped onion and 2 minced garlic cloves, and sauté until the onion is translucent.

Add 1 teaspoon of red pepper flakes and 4-5 chopped anchovy fillets to the pan. Cook for 1-2 minutes, stirring frequently.

Stir in 400 grams of chopped tomatoes, 1/2 cup of pitted and chopped black olives (main), 2 tablespoons of capers, and 1 teaspoon of dried oregano. Simmer the sauce for 15-20 minutes, allowing the flavors to meld together.

Add the cooked pasta to the sauce and toss well to coat. Cook for an additional 2-3 minutes to allow the pasta to absorb the sauce.

Remove from heat and garnish with chopped fresh parsley and grated Parmesan cheese before serving.
