Pasta e Fagioli is a classic Italian comfort dish, combining pasta and beans in a hearty, flavorful soup. It's perfect for a cozy family dinner or a delicious meal to share with friends. In a large pot, heat 2 tablespoons of oil over medium heat. Add 1 finely chopped onion, 2 minced garlic cloves, and 1 chopped carrot. Cook for 5-7 minutes until the vegetables are softened.

Add 1 teaspoon of red chili flakes, 1 teaspoon of dried oregano, and 1 teaspoon of dried basil. Cook for another 2 minutes, stirring frequently.

Stir in 400 grams of canned, drained, and rinsed kidney beans and 400 grams of canned, drained, and rinsed cannellini beans.

Add 1.5 liters of vegetable broth and 400 grams of canned, crushed tomatoes to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.

In a separate pot, cook 200 grams of pasta (such as ditalini or elbow macaroni) according to the package instructions until al dente. Drain the pasta and set it aside.

After the soup has simmered for 20 minutes, add the cooked pasta to the pot. Stir well and cook for another 5 minutes.

Season the Pasta e Fagioli with salt and black pepper to taste. Serve hot, garnished with freshly grated Parmesan cheese and chopped fresh parsley.
