Peel and chop 250 grams of ripe papaya into small cubes. Remove any seeds.
In a blender, add the chopped papaya, 250 grams of chilled plain yogurt (dahi), 2 tablespoons of sugar (adjust according to the sweetness of the papaya), and a pinch of cardamom powder.
Blend the mixture until smooth and creamy. If the lassi is too thick, add a little cold water or milk to adjust the consistency.
Pour the papaya lassi into serving glasses. Garnish with a few chopped pistachios or almonds and a sprinkle of cardamom powder.
Serve the papaya lassi chilled.
