Paniyaram
Paniyaram, also known as paddu or appe, is a popular South Indian snack made from fermented rice and urad dal batter. These fluffy and crispy dumplings are cooked in a special paniyaram pan and are perfect for breakfast or a tea-time snack. Ingredients: Idli rice, Urad dal, Salt, Coconut chutney, Cooking oil

Soak 1 cup of idli rice and 1/4 cup of urad dal separately for 4-5 hours.

Grind the soaked rice and dal separately to a smooth paste, adding water as required.

Mix the rice and dal paste together in a large bowl, add salt to taste, and let it ferment overnight.

The next day, heat a paniyaram pan on medium flame and add a few drops of oil in each mould.

Pour a spoonful of the fermented batter into each mould, cover the pan and let it cook for 2-3 minutes.

Once the bottom side of the paniyaram turns golden brown, flip it using a skewer or spoon and cook the other side.

Repeat the process until all the batter is used up. Serve the paniyaram hot with coconut chutney or sambar.
