Cut 200 grams of paneer into small cubes and set aside.
Chop 1 medium-sized cucumber, 1 medium-sized tomato, 1 medium-sized onion, and 1 small capsicum into small pieces.
In a large mixing bowl, combine the chopped vegetables and paneer cubes.
In a separate small bowl, prepare the dressing by mixing 2 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 teaspoon of chaat masala, 1/2 teaspoon of black pepper powder, and salt to taste.
Pour the dressing over the paneer and vegetable mixture, and toss gently to coat evenly.
Garnish with a handful of chopped coriander leaves and serve chilled.
