In a bowl, mix 200 grams of all-purpose flour (maida), 1/2 teaspoon of baking powder, 1/2 teaspoon of baking soda, and a pinch of salt. Add 2 tablespoons of oil and mix well.
Gradually add 100 ml of lukewarm water and knead the mixture into a soft dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
In another bowl, mix 200 grams of grated paneer, 1/2 teaspoon of red chili powder, 1/2 teaspoon of garam masala, 1/2 teaspoon of chaat masala, 1/4 teaspoon of turmeric powder, 1/2 teaspoon of cumin powder, 1 tablespoon of chopped coriander leaves, and salt to taste.
Divide the dough into equal portions and roll each portion into a ball. Flatten each ball and stuff it with the paneer mixture. Seal the edges and roll it out into a circular shape, about 1/4 inch thick.
Heat a tawa or griddle over medium heat. Place the rolled-out naan on the tawa and cook for 1-2 minutes until bubbles appear on the surface. Flip the naan and cook the other side for another 1-2 minutes until golden brown.
Apply some butter or ghee on the cooked naan and serve hot with your favorite curry or raita.
