In a bowl, mix 200 grams of grated paneer, 1 finely chopped onion, 1 finely chopped green chili, 1/2 teaspoon red chili powder, 1/2 teaspoon garam masala, 1/4 teaspoon turmeric powder, 1/2 teaspoon chaat masala, salt to taste, and 2 tablespoons chopped coriander leaves. Set aside.
In another bowl, mix 1 cup of whole wheat flour, 1/2 teaspoon salt, and 1 tablespoon oil. Gradually add water and knead to form a soft dough. Cover and let it rest for 15 minutes.
Divide the dough into equal portions and roll each portion into a thin paratha.
Heat a tawa or griddle over medium heat. Cook the paratha on both sides until golden brown, applying a little oil or ghee as needed.
Place the cooked paratha on a plate, spread 1 tablespoon of green chutney, and place a portion of the paneer filling in the center. Fold the paratha to wrap the filling and secure with a toothpick or wrap in foil.
Repeat the process for the remaining parathas and filling.
