Paneer Chowmein
Paneer Chowmein is a delicious Indo-Chinese fusion dish that combines soft paneer with stir-fried noodles and a medley of vegetables, all tossed in a flavorful sauce. Ingredients: Paneer, Hakka noodles, Spring onion, Garlic, Green chilli, Carrot, Onion, Vinegar, Tomato sauce, Corn starch, Red chilli sauce, Soy sauce, Capsicum, Ginger, Cabbage

Boil 200 grams of Hakka noodles as per the instructions on the packet. Drain the water and rinse with cold water to prevent sticking. Set aside.

Cut 200 grams of paneer into small cubes and shallow fry them in 2 tablespoons of oil until golden brown. Remove from the pan and set aside.

In the same pan, heat 2 tablespoons of oil and add 1 teaspoon of finely chopped garlic, 1 teaspoon of finely chopped ginger, and 2 finely chopped green chilies. Sauté for a minute.

Add 1 thinly sliced onion, 1 thinly sliced capsicum, 1 thinly sliced carrot, and 100 grams of shredded cabbage to the pan. Stir-fry the vegetables on high heat for 2-3 minutes, ensuring they remain crunchy.

In a small bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of tomato ketchup, 1 tablespoon of red chili sauce, 1 teaspoon of vinegar, and 1 teaspoon of cornstarch with 1/4 cup of water. Stir well to combine.

Pour the sauce mixture into the pan with the vegetables and cook for a minute until it thickens slightly.

Add the boiled noodles and fried paneer to the pan. Toss everything together, ensuring the noodles and paneer are well coated with the sauce.

Garnish with chopped spring onion greens and serve hot.
